Undhiyu is a Gujarati mixed vegetable dish that is a regional specialty of Surat, Gujarat, India. The name of this dish comes from the Gujarati word "undhu", which translates to upside down, since the dish is traditionally cooked upside down underground in earthen pots, termed "matlu", which are fired from above. This Undhiyu is served with Puri and shrikhand, this dish is a sure find at all Gujarati weddings in the winter months. Plus, it is a popular dish even in Gujarati households through the winter months.

First of all we will make special masala for Undhiyu. For this, in a bowl add finely chopped green garlic, finely chopped green coriander leaves, salt, carom seeds, dry coconut powder, ginger - garlic - green chili paste, white sesame seeds, sugar, asafoetida, turmeric powder, red chili powder and coriander cumin powder. Then Mix well.

Now let's tempering surti papdi. For this, clean the surti papdi and wash it with clean water. After that, remove the stalks of the brinjal and cut it in the middle + fill it with the undhiyu masala made in it. Now heat oil in a pressure cooker and add asafoetida, carom seeds, surti papdi, salt, turmeric powder,ginger garlic green chilli paste and sugar and mix well. Then add water to this and mix well, put the stuffed brinjal in it, close the lid of the cooker and cook for 3 whistles on medium

Now we will make muthiya. For this, in a bowl add chopped methi leaves, sorghum flour, gram flour, wheat flour, powdered sugar, white sesame seeds, asafoetida, turmeric powder, coriander cumin powder, dry coconut powder, ajwain ginger-garlic-green chili paste. Add chopped green coriander leavesand oil and mix well. Now if needed in this mixture add some water and make dough. Now put oil in your hands and make muthiya. After that, add muthiya to hot oil and fry till brown on medium gas flame.

Now add 2 big spoons of deep fried oil in a pan and heat it.Fry sweet potato pieces, potato pieces and yam pieces in it simultaneously on medium gas flame. Now cool this roots vegetable. Now add the undhiyu masala made on this roots vegetable and mix well and coat it with the masala.

Now first add the roots vegetable coated with masala to the fried oil, arrange the papdi on it, arrange the muthiya on it, then spread the masala on it, take water in hand and sprinkle water on it, cut the ripe banana in the middle and fill the masala inside it. Arrange it on top and put the cooked stuffed brinjal on it and cover the lid and cook on low flame for 5 to 7 minutes.

Now our very tasty and spicy Surti Undhiyu is ready to serve. Garnish with chopped green garlic, chopped green coriander and dried coconut powder and serve.
