In a bowl, mix the whole wheat flour with a pinch of sugar. Add 1 teaspoon of instant yeast for pizza, then add salt to the warm water. In the center of the flour, dissolve half a cube of fresh baker's yeast, then gradually incorporate the surrounding flour, adding extra virgin olive oil in a thin stream (about 1 tablespoon).

Once the dough is kneaded with your hands and folded to form a bundle, cover it with a warm cotton towel.

After letting it rise for 12 hours, remove the dough from the bowl, flip it over onto your work surface, and stretch it out onto a greased baking sheet. Poke holes in the dough with a fork, then top and bake in a preheated convection oven at 445°F (230°C) for 40 minutes.

For the topping: Add diced ham, smoked provolone cheese, rosemary leaves, and a drizzle of extra virgin olive oil.

Cook two large potato croquettes filled with pepper, salami, and melty cheese in an air fryer. Crumble them over the pizza, then bake everything for another 5 minutes. Enjoy!
