Brown Fried Rice with Shrimp

A nutritious, delicious, easy, and quick meal to prepare because it uses day-old rice and frozen shrimp. I chose these vegetables, but you can add or remove any to your liking. The same goes for the rice—I use brown rice, but you can make it with regular cooked white rice.

Prepare all the ingredients. In a wok or large skillet, heat half a tablespoon of vegetable oil (I use avocado oil). Sauté the onion and carrot until the onion is translucent but the carrot is still crisp. If using red pepper flakes, add them at this stage.

Add the broccoli and red bell pepper and stir-fry until they change color. Add the zucchini and continue to stir-fry. When all the vegetables are ready, add the rice, stir, and let it fry lightly.

Once the rice is hot, add the shrimp and stir until heated through. Do not overheat to avoid making the shrimp rubbery.

In a separate bowl, beat the egg with salt and pepper. Push the rice and vegetables to one side of the wok, add the remaining half tablespoon of vegetable oil, and pour in the beaten egg. Once the egg is halfway cooked, mix it with everything in the wok and cook until fully set.

Finally, add the teaspoon of sesame oil, the two tablespoons of soy sauce, and the garlic powder. Mix everything together and enjoy.
