Ingredients

Serves 2 servings
  1. 1 cupcooked and chilled brown rice (best if it's from the day before)
  2. 4 ozcooked frozen shrimp, thawed (about 120 grams)
  3. 1/2 cupchopped onion
  4. 1/2 cupdiced carrot
  5. 1/2 cupdiced zucchini
  6. 1/2 cupsmall broccoli florets
  7. 1/2 cupfinely chopped red bell pepper
  8. 1egg
  9. 1 tablespoonavocado oil
  10. 1 teaspoonsesame oil
  11. 2 tablespoonslow-sodium soy sauce
  12. 1/2 teaspoongarlic powder
  13. Salt and pepper to taste
  14. Red pepper flakes (optional)

    Prepare all the ingredients. In a wok or large skillet, heat half a tablespoon of vegetable oil (I use avocado oil). Sauté the onion and carrot until the onion is translucent but the carrot is still crisp. If using red pepper flakes, add them at this stage.

    Add the broccoli and red bell pepper and stir-fry until they change color. Add the zucchini and continue to stir-fry. When all the vegetables are ready, add the rice, stir, and let it fry lightly.

    Once the rice is hot, add the shrimp and stir until heated through. Do not overheat to avoid making the shrimp rubbery.

    In a separate bowl, beat the egg with salt and pepper. Push the rice and vegetables to one side of the wok, add the remaining half tablespoon of vegetable oil, and pour in the beaten egg. Once the egg is halfway cooked, mix it with everything in the wok and cook until fully set.

    Finally, add the teaspoon of sesame oil, the two tablespoons of soy sauce, and the garlic powder. Mix everything together and enjoy.
