Ingredients

1/2 hr
4-6 servings
  1. 1 cupleftover seasoned taco meat
  2. 6beaten eggs
  3. 5leftover cooked breakfast sausages, sliced
  4. 1/2medium onion diced, plus raw diced and reserved for topping
  5. 2Serrano Peppers diced, with seeds
  6. 3 tbsp.Veg oil
  7. Flour Burrito Tortillas
  8. Hot Commercial Chunky Salsa
  9. Kutbil-ik'-de Sauce

Cooking Instructions

    Chop onion and peppers and sausage.

  2. 2

    Whip your eggs into shape, have tortilla and onion garnish prepped.

  3. 3

    Add the oil to your cast iron skillet and preheat. Dunk your flour tortilla into the hot oil till puffy.

    Remove tortillas and add
    the onions, peppers,
    and sausage. Sautee one and a half minutes. Add the taco meat, heat through. Add the eggs and scramble.

    Serve the mixture piled in the puffy burrito shell and top with salsa and hot sauce and a garnish of raw onion.
