If you are have ever tried a smoked chinese tea called Lapsong Souchong, imagine how delicious that flavor is on smoked bacon. You can use a grill or barbecue to “tea smoke” bacon.
You only need a small charcoal and tea fire. Smoke 6 - 12 hours in a handwarm grill, 165F degrees. Tea and bacon are a perfect match of smoke flavors. String the bacon in the smoke pipe to hang and smoke, or lay on griddle with top closed.

Ingredients

6 -12 hours
2 people
  • 1 poundFresh lean pork belly, 3” square strip, skin (rind) on
  • 1/4 tspeach paprika powder, pepper, curing salt
  • 1 Tbsbrown sugar
  • 1 Tbsolive oil
  • 1/2 Cuplapsong souchong tea soaked in cold water
  • 1/2Charcoal chimney full of mesquite charcoal, add coals as needed
  • Flaked seasalt to rub sparingly
  • Equipment: grill or barbecue, butcher twine, bamboo skewer
  • Cost: pork belly with the rind on is $4 a pound at the farmers market, tea 50 cents, spices, oil 50 cents, charcoal $1, enough to smoke 4 pounds, $4.50 per pound

Steps

6 -12 hours
  1. 1

    Make one pound strips of bacon, 3” x 3” square, 12” long. Cure the fresh bacon as follows: dry with paper towel, rub curing salt, pepper, paprika, on the meat sides only. Rest overnight in fridge. Then coat all sides, skin included, with flaked salt, brown sugar and olive oil.

    To hang strips of the bacon inside the smoke stack, tie end with butcher twine, hang from wooden skewer.

    Lower bacon strip into smoke stack, hang in smoke stack in soaked Lapchong Souchong tea smoke, keep at 165 F degrees, keep fire going six to twelve hours. Soak tea in cold water, do not boil. You can also smoke the bacon, skin side down, on the grill in your barbecue with the top closed.

    How to slice smoked bacon strips with the rind on: slice bacon under a sharp angle, from top to bottom, then along the rind. Slice off bacon pieces across the grain without the rind. When done, use whole rind to make the best bean soups ever.
