Garlic Chives and Olives Farfalle

Farfalle with some freshly chopped Garlic Chives is an amazing idea on any day for Breakfast. It's my most favourite Breakfast. When Garlic Chives are available, it is absolutely enjoyed by my family in various dishes. And because they aren't available throughout the Year, it cannot be missed when it's available. This is generally the time of the Year when it's available aplenty.
Garlic Chives and Onion Chives are two types available. While Garlic Chives are less pungent, more garlicky and sweeter. Onion Chives on the other hand are more pungent just like Spring Onions or Green Garlic.
Garlic Chives are flat grass like with no bulb at the end with flat white part compared to Spring Onions where there is a White bulb. This is what differentiates both.
It's a herb in general and has a mild Onion flavour characteristic with them but also has a recognisable taste of Garlic too.

In this easy to do dish for Breakfast, I have used them for a lovely change. Beautiful looking Pasta, both delicious and flavourful plus healthy as well. It's a perfect idea for Brunch too. Healthy and filling.

Ingredients

25-30 minutes
5-6 servings
  • 500 gmPasta Farfalle
  • 3 tbspOlive Oil
  • 2-3finely chopped Garlic
  • 1 tspSalt or to taste
  • 1 tspRed Chilli powder
  • 2finely chopped Onions
  • 5-6chopped Tomatoes
  • 1/4 cupsliced Green Olives
  • 1/4 cupsliced Black Olives
  • 1 bunchGarlic Chives
  • 2-3 tbspchopped Coriander Leaves

Steps

25-30 minutes
  1. 1

    Boil Pasta al dente in a cooking pot with some salt and oil. Drain and keep aside until use.

    In a deep Kadai or a pan, butter or oil. Saute chopped garlic and onions until translucent and done. Add all the spices including salt now along with the freshly chopped tomatoes or the store bought tomato paste whichever is convenient. Mix well. Cover and cook for 5-6 minutes or until the tomatoes are done. The red sauce should be thick and juicy.

    Also add some freshly chopped garlic chives too. These add a bit of flavour and aroma to the dish.

    And finally add boiled pasta to it with sliced olives. Give it all a gentle mix. Garnish with chopped coriander and serve hot immediately.
