California Farm Tenderloin Apple Skewers

Great dinner, quick, in the oven or on the grill. Pork Tenderloin pairs well with green apples like Granny Smith Apple. I season skewered meat afterwards. I first taste a piece of meat to see how much flavor it has from the other ingredients and the smoke.
Fifteen minute fire. If your grill has a smoke pipe like mine you can use the smoke stack to make smoked bacon from the leftover fire after you have grilled the skewers. See other recipe below.

Ingredients

15 minute grill start up, 15 minute grilling
2 people, 2 dinners
  • 12 slicesPork tenderloin, 1 pound
  • 1Granny Smith green Apple, quartered
  • 2-10boiler onions
  • 4-10preboiled fingerling potatoes
  • 4-10cherry tomatoes
  • 4-10 piecespoblano pepper
  • Sprinkle Flaked seasalt
  • Sprinkle Crushed green peppercorns
  • Sprinkle granulated garlic
  • 1 cupsoaked lapsong souchon smoked tea, or ground coffee, or applewood chips
  • 1Charcoal chimney mesquite charcoal
  • Tea smoked bacon

  • Equipment: your oven, or outdoor grill, 2 skewers
  • Cost: pork $4, vegetables $3, charcoal $1, two dinners, $4 each

Steps

15 minute grill start up, 15 minute grilling
  1. 1

    Wash and slice pork tenderloin. Preboil fingerling potatoes five minutes, skewer meat between apple quarters and vegetables. Leave air space to grill ingredients evenly.

    If you have an oven, you can place a baking tray with extra vegetables and a tablespoon of tea, ground coffee or soaked wood chips sprinkled thin under your 500 F degree broiler with the skewers to get smoke flavor. Be careful not to create a fire. On the grill, start charcoal fire, when coals are hot, add soaked applewood chips, smoked tea or ground coffee. Grill at 350 F degrees. Put skewers and extra vegetables on grill, top on, 15 minutes, season, serve. Enjoy.
