Ingredients

4 servings
  1. 6Medium size Karela Sliced in Half, seeds out and cut into 1/4" thick slices
  2. 1ts salt + 1 ts
  3. 1/2ts turmeric powder + t12 ts more
  4. 1Large Onion sliced thin
  5. 2Tomatoes diced
  6. 1 TbsGinger Garlic Paste
  7. 1ts cumin seeds
  8. 1ts coriander powder
  9. 1 TbsOlive Oil
  10. 3 cups cold water
  11. 1ts crushed chilies

Cooking Instructions

30 mts.

    Mix 1 ts salt and 1/2 turmeric in 3 cups of water. Soak sliced Karela for 10 mts.

    Heat Heavy Pan, cast iron if you have it. Add olive oil. Heat oil 2 mminutes. Add Cumin and coriander and cook 1 minutre. Add Ginger and Garlic Paste cook 1 minute. Add sliced Onion and cook 5 minutes. Now add tomatoes and cook 5 minutes. Now add 1/2 ts turmeric powder and crushed chilies. Mix it well.

    Drain sliced Karelas from water and add it to the Pan. Mix it well on Medium Heat. Reduce heat low and cook it covered for 15 minutes.

    Sprinkle some chopped fresh parsley and serve.
