  • 1 cupfresh green asparagus tips
  • 1 cupwoody ends of asparagus
  • 2 cupscoconut milk
    California Farm Fresh Organic Coconut Milk and Cream
  • 1 cupcroutons
    California Farm Croutons and Breadcrumbs
  • 1 Tspgranulated hardneck garlic, or
    California Farm Made Granulated Garlic
  • 1 Tspground black garlic
    California Farm Made Black Garlic
  • Equipment: cast iron soup pan, cast iron skillet, sieve
  • Cost: asparagus $1, coconut milk 50 cents, croutons 20 cents, 85 cents per dinner

  1. 1

    Break off the ends of the asparagus stalk by bending between your fingers till they snap. They will break between the woody end and the tender part. Use the wooden ends to make asparagus soup. Boil in coconut milk, 15 minutes. Puree with coconut milk in food processor. Pour back in pan through sieve to catch the woody pieces, simmer 15 minutes.

    Bake french bread croutons in olive oil with granulated garlic till crispy.

    Add fresh tips of asparagus with croutons on top of asparagus broth, serve hot.
