Fluffy Pancakes (eggless)

I do this tiny amount (only 4 pancakes) because my daughter likes to have it for breakfast. And she doesn’t need more than 4 🤗 she likes it with whipped cream but you can add chocolate chips to the batter. A lot of tiny details in the process but it’s worth to get a hang of it.

Measure flour in the small bowl

In the other dish measure buttermilk and then warm it up a bit (like 10sec in microwave). Add sugar and salt. Mix to melt in. Add it to the flour and mix well. The result batter must be not too dry not too wet. If it’s too dry add buttermilk. If too liquid add more flour.

Pour sunflower oil on the pan just to cover with thin layer. Heat it on medium heat (7 out of 10). Important to wait for it to be hot!

Mix baking soda in the batter. You need to do it thoroughly but Fast. It you don’t mix good you will have bitter parts if soda in pancakes. But if you do it too long the air bubbles will be ruined and we need them for fluffiness! Don’t mix after you done!

After the pan is surely hot spoon the batter on it carefully trying not to pop the air bubbles. Flip after the bottom is golden ready.
