The two types of Egyptian dukkah spice I know are the Basic one and the De Luxe one. Both are delicious, the De Luxe one has more ingredients and is richer in flavor. Here are both recipes that each make 200 gram jars, very light stuff that fits in my 8 oz spice containers. Gives an amazing flavor when roasting vegetables in dukkah and oil.

Ingredients

15 minutes
2 people, 200 gram containers
  1. Basic dukkah:
  2. 3 TbsHazelnut
  3. 1 TbsSesame seeds
  4. TspCoriander
  5. TspCumin
  6. TspCayenne
  7. TspFlaked seasalt
  8. De Luxe dukkah:
  9. 1 TbsHazelnut
  10. 1 Tbsalmond
  11. TbsCashew nut
  12. TbsPistaccio nut
  13. TbsSesame seed
  14. TspCoriander
  15. TspCumin
  16. TspCayenne pepper
  17. TspFlaked seasalt

Cooking Instructions

15 minutes
  1. 1

    Spices, nuts, salt: grind each in spice grinder, nut pieces the size of broken sesame seeds, spices ground to powder.

    Containers: use spice sprinkler containers that hold 8 ounces of salt.

  3. 3

    Whisk all ingredients together well. Fill containers, label and date. Fresh for a year.
