When garden spices, seeds and herbs ripen, we pick and hang them to dry. Keep them dried in a small plastic bag with a label and year. Combine them into pickling spices and other spice mixes when the last ones are ready, usually the red peppers. We purchase some spices, mix them together to use till next harvest.

  • Equal amounts of each by weight:
  • Dried red peppers like Kashmiri or Arbol, grown and crushed
  • California Bay Tree Laurel, grown and crushed
  • Coriander seeds, grown
  • Yellow mustard seeds, grown
  • Black mustard seeds, purchased
  • Green peppercorns, purchased
  • Flaxbark junniper berries, grown
  • Star anise, purchased
  • Fennel seeds, grown
  • Dill seeds, grown
  • Cloves, purchased
  • Equipment: digital kitchen scale, small mason jar

Collect all season
  1. 1

    Mix enough pickling spices for the season, one small jar: tsp crushed dried red pepper, like Arbol or Kashmiri. Tsp crushed dried Laurel leaves, tsp coriander seeds, 1 tsp yellow mustand seeds, 1 tsp black indian mustard seeds, tsp green peppercorn seeds, tsp juniperberry seeds, tsp fennel seeds, tsp star anise seeds, tsp dill seeds, tsp cloves. Use 2 tsp of this pickling mix per pint of vinegar.

I try to bring out the original flavor of ingredients, then add layers of spices, herbs and flavorings that enhance, not distort the taste.
