Flan

This classic Flan recipe is a silky smooth, classic version of this traditional Latin American dessert. This caramel-topped custard is gently cooked in the oven until it’s firm to the touch.

Steps

Preheat oven 350F.

Place the sugar in a small skillet over medium heat and stir while it liquefies.

Allow sugar to boil and caramelize to desired colour and thickness, stirring occasionally to prevent burning.

Pour the caramel into the flan dish or pan. Spread evenly over the bottom of the pan.

Place the eggs, egg yolks, vanilla, milk, cream cheese and condensed milk in a blender and process for at least 5 minutes.

Strain the mixture and pour over the caramel.

Place the dish in a baking pan and place in the centre of the oven. Pour boiling water in the baking dish halfway up the sides of the pan.

Bake for 1 hour 10 minutes or until a toothpick inserted in the centre comes out clean.

Cover the flan with foil if the top is getting too brown.

Remove from oven and cool to room temperature. Cover with plastic wrap and refrigerate overnight.

Before serving, cut around the edges, invert on to a deep-sided serving plate. Garnish with strawberries.

Serve each slice with caramel syrup.
