You can cook it with veggies but add the veggies maybe 30 minutes before deciding to serve. Otherwise you just have vegetable goop. This recipe produces the tastiest sirloin I have ever had. I think this rub is for a 2 lb roast so please double rub if your roast is bigger than 3 lb.

  • For the rub
  • 1 1/4 tablespoonspaprika (or for change use Edamame seasoning)
  • 1 tablespoonkosher salt
  • 1 teaspoongarlic powder
  • 1/2 teaspoonground black pepper
  • 1 teaspoononion powder
  • 1/2 teaspoonground cayenne pepper
  • 1/2 teaspoondried oregano
  • 1/2 teaspoondried thyme
  • 2-3 tablespoonsolive oil
  • Roast
  • 1 (3 pound)sirloin tip roast

    Mix paprika (or Edamame seasoning mix), kosher salt, garlic powder, black pepper, onion powder, cayenne pepper, oregano, and thyme in a small bowl. Stir in olive oil; allow mixture to sit for about 15 minutes before you rub it in the roast. However once it has sat for the 15 minutes and I have rubbed it on, I let my roast sit overnight in the fridge. You do not need to let it sit so long as long as you let it sit the original 15 mins. I just like it to marinate.

    When you are ready to cook. Take the roast out of the fridge and let it sit on your counter for 20 minutes or till it gets to room temperature. This makes a roast juicier and cook more evenly. Preheat the oven to 350 degrees F (175 degrees C) or look at chart in step 4 to determine the time and type of roast you are cooking. Line a baking sheet with aluminum foil. Place roast on the prepared baking sheet.

    Place Roast in the preheated oven until an instant-read thermometer inserted into the center reads at least 145 degrees F (63 degrees C), about 1 hour. Remember this will be longer for bigger roasts. Try looking at the chart to figure out your timing.

    Let sit 15 minutes before slicing.

    I did a 1.232 kg or a 2.7160951 lb roast in the picture.
