I really like the idea of beef stroganoff but I don't like egg noodles, so I made up a fake version that the boys love. Add in spinach and we've covered the basic food groups.

I really like the idea of beef stroganoff but I don't like egg noodles, so I made up a fake version that the boys love. Add in spinach and we've covered the basic food groups.

Ingredients

30 minutes
8 servings
  1. 1onion chopped
  2. 1 lbground beef
  3. 5 ozpackage fresh spinach
  4. 15 ozbottle Garlic Alfredo sauce
  5. 1 lbpasta of choice
  6. 1/2 tspchili powder
  7. Olive oil
  8. Salt & pepper to taste

Cooking Instructions

    Cook pasta however you like to until desired doneness. Reserve some of the pasta water.

    While the pasta is cooking, heat a deep skillet on medium high heat and add enough oil for the onions. Add the onions and cook until they turn translucent, about 5 minutes. Add in the ground beef and cayenne pepper and cook until beef is browned, about 10 more minutes.

    When the beef is done, add the spinach and cook until wilted (5 mins). Pour in the Garlic Alfredo sauce, turn down the heat to medium low and heat through, about 5 minutes.

    Turn off heat on sauce and add in cooked pasta. Stir to combine. If it seems a little dry, add in some reserved pasta water a little at a time until desired moisture is reached.

    Serve immediately with parmesan cheese.
