Rosti is a German dish that farmers eat for breakfast, which uses mainly potatoes and other vegetables, but I have added paneer to it and made this roastie. It can be made in different ways. Some take all raw vegetables, some use boiled or half-cooked.

Grate the Cheese Boiled Potatoes for Toppings. Now mix grated carrots in it. Then add other desired veggies to it, add salt as per taste, and mix. Add coriander, paneer, and other spices and mix in a bowl.

Now put butter or oil on a pan, put the mixture little by little, and make a roast and brown it on both sides. Serve with green chutney or red chutney.
