I used semolina in this recipe to make the best qatayef you’ll ever try!

Mix the yeast with the stevia and hot water very well.

Add the semolina, oat flour, and baking powder. Place everything in a blender and blend until smooth.

Strain the mixture thoroughly, then let it rest for 10 minutes.

Lightly grease a skillet with oil the first time only (you can skip this step if using a nonstick skillet).

Pour the batter onto the skillet using a ladle or ice cream scoop to make round shapes.

Once bubbles form and the surface is cooked, remove the qatayef and cover them immediately to keep them from drying out.

I filled them with raisins, shredded coconut, and peanuts, then stored them in the freezer.

You can fry them or cook them in an air fryer at 400°F (200°C) for 7 minutes, flipping halfway through so both sides brown and cook evenly. Enjoy!
