Soak Lobia Overnight, Assemble ingredients and boil Lobia in sufficient water.

In heated pan add oil, allow to heat, add bay leaf + dry red chilli + Cumin seeds + ginger and allow to crackle, then add chopped Tomato + green chilli and sauté for a minute.

Tomato turns mushy, then add all spices along with little water and sauté for 2-3 minutes till spices leaves Oil. Add boiled Lobia along with water.

Add salt as required and cook for around 4-5 minutes.
Add water as per desired consistency. This recipe demands a thick consistency.
Dish is done.
