Ingredients

20 minutes, prep. time -15 minutes

  1. 200 grmskaddu - pumpkin
  2. 200 grmsgavar
  3. 200 grmstomatoes
  4. 6 clovesgarlic
  5. 2 tsproasted jeera coriander powder
  6. 1/2 tspturmeric powder
  7. 2 tspred chilli powder
  8. 1 tspajwain
  9. 1 tspmustard seeds
  10. 1/2 tsphing
  11. 3 tspjaggery
  12. 2 tsproasted besan
  13. 3 tspoil
  14. Salt to taste
  15. Water as required

Steps

20 minutes, prep. time -15 minutes
  1. 1

    Wash and cut pumpkin and clusterbeans. Add in tin and cook it in pressure cooker to 4 whistles blows. When cools completely, open cooker and heat a kadai.

    Add oil, ajwain, hing, mustard seeds, and chopped garlic. Saute it.

    Now add chopped tomatoes and cook it for 2 minutes. Stir well. Add water as needed. Add salt, jaggery, and roasted besan in tomato gravy. Mix well to avoid any lumps of besan.

    Now add steamed pumpkin and clusterbeans in gravy. Add turmeric powder, red chilli powder, and jeera coriander powder. Mix well. Cook for couple of minutes more.

    Ready to serve a very delicious and nutritious curry. Garnish with coriander. You can enjoy with roti, paratha, or steamed rice.
