Homemade Soy Sauce Ramen

This is a slightly spicy soy sauce ramen that doesn't use store-bought ramen soup base. The spiciness is mild enough for kids to enjoy, but you can adjust the heat to your liking! Also, check out my recipe for Homemade Miso Ramen (Recipe ID: 17390611).

Ingredients

Serves 2 servings
  • For 2 servings: store-bought ramen noodles
  • [Soup]
  • To taste: toasted sesame oil
  • 1clove: garlic and ginger
  • 1/2teaspoon: doubanjiang (chili bean paste)
  • Just over 3 cups (about 750 ml): hot water
  • Chinese soup base (granules or powder) -
  • 1 teaspooneach: sake, salt, sugar
  • 2/3teaspoon: Japanese dashi powder
  • 2tablespoons: soy sauce
  • 1pinch: black pepper and chili oil
  • [Toppings]
  • Green onions, seasoned soft-boiled eggs, nori (seaweed)
  • Chashu pork, menma (bamboo shoots), or any toppings you like

Steps

    Bring water to a boil for both the soup and the noodles. Mince the garlic and ginger. Prepare and slice your toppings as well.

  2. 2

    Heat a pot, add sesame oil, then sauté the minced garlic, ginger, and doubanjiang.

  3. 3

    When the garlic becomes fragrant, add the soup ingredients marked with ○, adjust the flavor, and strain the soup.

  4. 4

    Cook the noodles until slightly firm, place them in bowls, and pour the soup from step 3 over them.

  5. 5

    Add chili oil to taste and top with your favorite toppings. Enjoy!
