Thinking about what to make for dinner one day, I opened the fridge... nothing new, but there were flour tortillas, Oaxaca cheese, and leftovers from previous days... so I decided to make burritos, and voila, they were a hit at home.

Thinking about what to make for dinner one day, I opened the fridge... nothing new, but there were flour tortillas, Oaxaca cheese, and leftovers from previous days... so I decided to make burritos, and voila, they were a hit at home.

In a non-stick pan, melt some butter and place the flour tortilla in it.

Then add the refried beans, cheese, and the leftover food... in this case, I used barbacoa.

Roll it up tightly and fold the edges to keep the filling from spilling out.

And it's ready! If you want them crispy, place them on a griddle over very low heat for about three minutes on each side.
