Christmas Sushi Bûche de Noël

I couldn't decide whether to make a Noël cake or a two-tiered decorated cake this year. After a vote, we went with the two-tiered version, but I still wanted to make a Noël cake! So, I decided to make a rolled sushi Noël. This is a simple recipe where you just decorate rolled futomaki with mashed potatoes. But it's so cute, it could rival a store-bought cake! Surprise your family! The smoked salmon and mashed potatoes inside go perfectly together!

Steam or microwave the potatoes with the skins on until tender. While still hot, peel and mash them through a sieve. Add salt, pepper, and soy milk to make mashed potatoes. For the eggs, mix with dashi stock and salt, then cook thin omelets in a large skillet and set aside.

Use one omelet for the sushi roll. With the other, cut out six star shapes using a 1-inch (3 cm) star cutter, then finely shred the remaining omelet and mix it into the chirashi sushi rice made with the store-bought mix.

Refer to Recipe ID:17447746 for making the radish Santas and chikuwa Noël rolls. Use some of the mashed potatoes to make the radish Santas.

Place a sheet of nori on a sushi mat. Spread half of the chirashi sushi rice on top. Roll it up tightly from the near side, like a Swiss roll, to make the center futomaki roll. (Sorry, I forgot to take a photo of this step!)

Lay plastic wrap on the sushi mat, then place the thin omelet on top. Spread the remaining rice over the omelet, then layer the smoked salmon as shown in the photo.

Place the previously rolled nori roll at the near edge, then roll everything up tightly. Let it rest in the sushi mat for about 15 minutes to set.

Remove from the mat and unwrap the roll. It should look like this! If you have trouble making a large thin omelet, you can just use nori instead—no problem!

Place bamboo leaves on a serving plate, then set the futomaki roll on top. Soften the remaining mashed potatoes by adding more soy milk until easy to spread. Reserve about 2 tablespoons, then spread the rest evenly over the roll using a palette knife or similar tool.

Use a fork to create a Bûche de Noël pattern on the mashed potatoes. Cut off a 1–1.5 inch (3–4 cm) piece from one end, and place the cleanly cut end on top of the roll to resemble a tree stump.

Press katsuobushi onto the bottom third of the roll, then attach the star-shaped omelet pieces.

Arrange the chikuwa Noël rolls and radish Santas around the roll. Place one Santa on the stump, and pipe the reserved mashed potatoes in front to look like whipped cream. Add holly leaves if you like, and it's done!
