Ingredients

Makes one baking sheet
  1. 3 1/2 tablespoonsbutter (about 50g)
  2. 1 tablespoonsugar (optional)
  3. 1medium egg
  4. 1/4 cupEdam cheese powder (about 30g)
  5. 1/2 cupcake flour (about 70g)
  6. 1/2 cupbread flour (about 70g)
  7. 2/3 teaspoonbaking powder
  8. 1/4 teaspoonnutmeg (optional)

Steps

    Bring the butter and egg to room temperature. Sift the flours and other dry ingredients together.

  2. 2

    Add sugar to the softened butter and mix well with a whisk. Add the beaten egg and cheese in that order, mixing further.

  3. 3

    Add the flour mixture all at once and gently fold with a spatula, being careful not to overmix. Once the dough is no longer floury, form it into a ball, divide it in half, and wrap each half in plastic wrap.

    Roll each half into a rectangle about 1/5 inch thick. Chill in the refrigerator for 30 minutes to 1 hour. Preheat the oven to 340°F (170°C).

    Cut into strips 1/5 to 1/4 inch wide. Twist if desired and place on a baking sheet. Bake in the preheated oven for about 11 minutes, then let cool on the baking sheet.
