Rinse the bean sprouts and drain well. Slice the chikuwa into rounds or on a diagonal. In a small bowl, mix together all the ● sauce ingredients. If using frozen udon, thaw in the microwave (about 50 seconds at 1000W, then flip and heat for another 40 seconds).

Heat the sesame oil in a frying pan. Add the bean sprouts and chikuwa, and stir-fry. Once the bean sprouts are slightly cooked, add the udon and the mixed ● sauce. Stir-fry, breaking up the noodles as you go. Be careful not to burn the sauce.

When most of the liquid has evaporated and the noodles are heated through, transfer to a plate. Top with mayonnaise and green onions, and enjoy!
