Ingredients

Serves 1 serving
  1. 1 packudon noodles (frozen is fine)
  2. Any vegetables or proteins you have in the fridge (for this version, see below*)
  3. 1/2 bagbean sprouts*
  4. 1 stickchikuwa (Japanese fish cake)*
  5. 1/2 tablespoonsesame oil
  6. 1 tablespoon● oyster sauce
  7. 1 tablespoon● soy sauce
  8. 1/2 teaspoon● chicken bouillon powder
  9. 2 tablespoons● water
  10. Mayonnaise, to taste
  11. Plenty of chopped green onions

Steps

    Rinse the bean sprouts and drain well. Slice the chikuwa into rounds or on a diagonal. In a small bowl, mix together all the ● sauce ingredients. If using frozen udon, thaw in the microwave (about 50 seconds at 1000W, then flip and heat for another 40 seconds).

    Heat the sesame oil in a frying pan. Add the bean sprouts and chikuwa, and stir-fry. Once the bean sprouts are slightly cooked, add the udon and the mixed ● sauce. Stir-fry, breaking up the noodles as you go. Be careful not to burn the sauce.

    When most of the liquid has evaporated and the noodles are heated through, transfer to a plate. Top with mayonnaise and green onions, and enjoy!

    Just my opinion, but I highly recommend using bean sprouts and chikuwa as the toppings—they're healthy and delicious!
