Ingredients

10 rolls
  1. 5 cupsbread flour (about 625 grams; bread flour is best for a fluffy, delicious result)
  2. Pinchsalt
  3. 1 tablespoonbaking powder
  4. 2 tablespoonsbutter
  5. 2 tablespoonscorn oil
  6. 1 tablespoonsugar
  7. 1 cupwarm milk (about 240 ml)
  8. Yeast
  9. 1egg (for the dough)
  10. 1egg (for brushing)
  11. Nigella seeds
  12. Filling (Domty cheese with olives is amazing for the filling – or use jam, or chocolate)

Steps

  1. 1

    In a bowl, combine the flour, salt, and baking powder. Mix well.

  2. 2

    In another bowl, mix the warm milk with the yeast and stir until the yeast dissolves.

  3. 3

    In a blender, beat the egg with the butter, oil, and sugar. Add the milk and yeast mixture.

  4. 4

    Add this mixture to the flour, salt, and baking powder. Knead until a dough forms, then let it rise until doubled in size.

    For individual rolls, shape the dough into balls and fill each with your chosen filling.

  6. 6

    For honeycomb bread, shape the dough into balls, fill them, and place them close together in a baking pan so they touch.

  7. 7

    For croissants, roll out the dough into a large circle, cut into 4 quarters, then cut each quarter into 2 triangles. Place the filling at the base of each triangle and roll up.

  8. 8

    For pâté, roll out the dough into a rectangle, cut into small rectangles, place the filling at one end, and roll up.

  9. 9

    Brush the tops with beaten egg and sprinkle with nigella seeds.

  10. 10

    Bake in the oven at 350°F (180°C) for 7–10 minutes.

    Broil for 5 minutes until golden brown.
