Japanese Curry Udon (Udon Shop Style)

Ever have just one serving of curry left in the pot? This recipe turns that leftover curry into a bowl of curry udon, just like you’d get at a Japanese udon shop. Plus, it helps clean out your pot—a win for any home cook!

Recipe Background
Just pouring curry over udon noodles didn’t feel quite right, so I tried making it in the style of the curry udon served at udon shops in Japan. I often end up with a single serving of curry left, and this is the perfect way to use it up. When you add water to the pot, scrape up any curry stuck to the sides—it makes cleaning up so much easier!
