Ingredients

Serves 4 servings
  • 2 cupsuncooked Japanese short-grain rice (about 360 grams)
  • 1/2 can (4 slices)Spam or similar canned pork
  • 2large eggs
  • 2 sheetsnori (dried seaweed)
  • as neededMayonnaise,

Steps

  1. 1

    First, prepare the fillings. Cut the Spam into 4 slices. In Okinawa, various brands of canned pork are available, but Spam works well.

    Heat a generous amount of oil in a pan and fry the Spam slices on both sides until golden brown. Start by cooking the Spam first.

    Using the remaining oil in the pan, make a flat omelet with the eggs. Since Spam is salty, you don’t need to add salt to the eggs.

    If you have a Spam musubi mold, place it on top of a sheet of nori and spread a thin layer of rice inside the mold.

    Next, add a slice of Spam and some mayonnaise (the mayonnaise is optional).

    Place the omelet on top of the Spam.

    Add another layer of rice, then press down firmly to shape.

    Remove from the mold and wrap with the nori to finish. This recipe makes two rolls, which can be cut in half to serve four people.

    If you don’t have a mold, you can shape the onigiri by hand, though it may be a bit tricky. For a grown-up flavor, try mixing some coarsely ground black pepper into the rice!
