Easy Sweet and Savory Teriyaki Chicken

Thank you for making this recipe so popular in May 2013! Just sear the chicken, add the seasonings, and simmer for a rich, flavorful teriyaki chicken. Great for lunchboxes too!
Recipe background:
When my kids were little, I wanted a budget-friendly recipe that looked impressive but was easy to make in one skillet while preparing other dishes. That's how I came up with this recipe.

Steps
- 1
Place the chicken skin-side down in a dry skillet and sear over medium-low heat until the skin is golden and crispy. (Cooking until crispy makes it extra delicious.)
- 2
Flip the chicken and sear the other side until browned. Use a paper towel to wipe away any excess fat from the pan.
- 3
Add the water, mirin, sake, and sugar to the skillet with the chicken. Cover and simmer on low heat for 6–7 minutes.
- 4
Remove the lid, add the soy sauce, and simmer, turning the chicken occasionally, until the sauce thickens and coats the chicken. Slice the chicken into bite-sized pieces and drizzle with the sauce.
- 5
For the photo shown, I used one piece of chicken breast with most of the skin removed to make a lighter version for my daughter who is on a diet.
