Ingredients

Serves 1 serving
  1. 1pork cutlet (tonkatsu)
  2. 1/4onion
  3. 1egg
  4. 1 tablespoonsoy sauce
  5. 1 tablespoonsugar
  6. 1 tablespoonsake (Japanese rice wine)
  7. 1 tablespoonmirin (sweet rice wine)
  8. 1/2 tablespoondashi powder
  9. 3–4 tablespoons water
  10. Mitsuba (Japanese parsley), shredded nori, or similar, as desired

Steps

    In a small frying pan or saucepan, combine all the ingredients marked with ☆ and the thinly sliced onion. Bring to a boil, then reduce to low heat, cover, and let simmer for about 3 minutes.

    When the onion is soft, add the pork cutlet and simmer briefly. Pour the beaten egg evenly over the top. When the egg is half-cooked, turn off the heat, cover, and let it steam for 1–2 minutes until done.

  3. 3

    On this day, I served the pork cutlet and egg mixture separately from the rice. But my family still prefers it served as a rice bowl!
