This savory meat miso sauce is delicious not only on udon, but also over Chinese noodles, somen, or rice. Thank you for making this recipe popular!

Finely chop the green onion, garlic, and ginger.

Heat sesame oil in a pot. Sauté the green onion, garlic, and ginger until fragrant, then add the ground pork and cook thoroughly. Add just enough water to barely cover the ingredients.

Simmer for a bit, then add the sweet bean paste, sugar, soy sauce, and oyster sauce. Continue to simmer, then add the cornstarch slurry to thicken the sauce.

Cook the udon noodles according to the package instructions. Drain well and place on plates. Top with the meat miso sauce, julienned cucumber, and any other vegetables you like.

You can also serve this sauce over Chinese noodles to make Zha Jiang Mian!
