Ingredients

Makes about 30 bite-sized pieces
  • Sushi rice for 2 cups (about 360 ml uncooked rice, makes about 4 cups cooked)
  • 1avocado
  • 2 teaspoonslemon juice (10 ml)
  • 1fillet sashimi-grade salmon
  • as neededCream cheese,
  • as neededWasabi,
  • Chopped green onions or hard-boiled egg yolk, as desired

Steps

  1. 1

    Tear the cream cheese into small pieces, about the size of your pinky’s first joint. Shape the sushi rice into small balls, about the size for one bite each.

  2. 2

    Slice the salmon thinly. Remove the pit from the avocado, slice it thinly, and drizzle with lemon juice.

  3. 3

    On a small piece of plastic wrap, layer green onion, salmon, and avocado in that order. Add a bit of cream cheese and wasabi, then place a rice ball on top. Gather the plastic wrap and twist to form a ball shape.

  4. 4

    Shape into a round ball, remove the plastic wrap, and arrange on a plate. Garnish with green onions or hard-boiled egg yolk if you like.
