Featured in a soup recipe book, thank you so much! It's surprisingly easy to make from scratch, yet you'll be amazed at how authentic this stew tastes.

About this recipe
This is a variation of my demi-glace sauce recipe. I tried it out after buying a pressure cooker. It turned out so delicious, I was shocked!

Ingredients

Serves 4-5 servings
  1. 500 gbeef tendon
  2. 2medium onions
  3. 1large carrot
  4. 1 packmushrooms
  5. 1 headbroccoli
  6. ☆Demi-glace sauce
  7. 60 gbutter
  8. 6 tablespoonsall-purpose flour
  9. 9 tablespoonseach ketchup, Worcestershire sauce, red wine
  10. 1 3/4 cupswater (450cc)
  11. 2beef bouillon cubes
  12. 2 pieceschocolate

Cooking Instructions

  1. 1

For the demi-glace sauce, see recipe ID18074359 on cookpad.com. It's easy! Be sure to read the tips too!

  2. 2

This time, I used beef tendon. In a pressure cooker, add 2 tablespoons (30g) of butter (not listed in ingredients), cut the meat into bite-sized pieces, season with salt and pepper, and sauté until the color changes.

  3. 3

Cut the vegetables into large pieces, add to the meat, and quickly sauté.

  4. 4

Add 1 3/4 cups (400cc) each of water and red wine (not listed in ingredients), and 2 bouillon cubes. Cover and cook in the pressure cooker. Adjust cooking time to your preference.

  5. 5

Add the demi-glace sauce and simmer over medium heat, stirring to prevent burning, until it reaches your desired thickness. It's amazing!

  6. 6

After adding the sauce, I simmered it over medium to high heat for about 30 minutes, stirring. Wash and microwave the broccoli, then add it at the end.

  7. 7

If the stew tastes too acidic while simmering, add 1 tablespoon each of jam and mirin from your pantry.

  8. 8

Thanks to everyone, this recipe became popular! Thank you so much!!

  9. 9

Incredible!! This recipe was published in a book. I'm truly thrilled!
