This time, I used beef tendon. In a pressure cooker, add 2 tablespoons (30g) of butter (not listed in ingredients), cut the meat into bite-sized pieces, season with salt and pepper, and sauté until the color changes.

Cut the vegetables into large pieces, add to the meat, and quickly sauté.

Add 1 3/4 cups (400cc) each of water and red wine (not listed in ingredients), and 2 bouillon cubes. Cover and cook in the pressure cooker. Adjust cooking time to your preference.

Add the demi-glace sauce and simmer over medium heat, stirring to prevent burning, until it reaches your desired thickness. It's amazing!

After adding the sauce, I simmered it over medium to high heat for about 30 minutes, stirring. Wash and microwave the broccoli, then add it at the end.

If the stew tastes too acidic while simmering, add 1 tablespoon each of jam and mirin from your pantry.
