Warm and Delicious Celery and Bacon Soup

The aroma of celery and the sweetness of onions create a gentle Japanese-style soup. On December 8, 2012, 100 people expressed their gratitude for this comforting taste. The origin of this recipe: I became a monitor for a collaboration with Ito En's vegetable juice, which contains 20 types of vegetables. Using the celery, carrots, and mitsuba from the juice, I adapted a celery soup that my family has been making for about 15 years.

Thinly slice the onion and cut the bacon into bite-sized pieces.

Julienne the carrot.

In a heated pot, sauté the bacon over medium heat.

Once the bacon releases its fat, add the onion and sauté until soft, then add the carrot and lightly sauté.

Add about 4 cups of water to the pot, add the bouillon cube, cover, and let it simmer.

Meanwhile, remove the strings from the celery and cut it into slices about 1/4 inch thick. Cut the mitsuba into bite-sized pieces.

Once boiling, skim off any foam, add the celery, and bring to a boil again. Add the soy sauce and it's ready.

Serve in bowls, top with mitsuba, and sprinkle with coarsely ground black pepper to taste.
