This is more about how to make the noodles than a full dish. It's surprisingly easy to do. Making it together as a family can be fun! Recipe background: I wanted to eat delicious udon, so I decided to try making it myself.

Mix the flours together well with chopsticks. Pour the saltwater over the flour and mix with chopsticks. Once it starts to come together, knead it into a dough.

Once the dough forms a ball, place it in a large plastic bag (like a rice bag). Step on the dough to flatten it, then fold it and step on it again. Repeat this process 7 times.

Cut the dough in half and shape each piece into a ball. Wrap in plastic wrap and refrigerate for about 6 hours.

Dust a cutting board with flour and roll out the dough with a rolling pin into a rectangle, about 1/8 inch (3 mm) thick.

Fold the dough and cut it into even-width noodles. Dust with flour and separate the noodles.

Boil the noodles in a large pot for about 10 minutes. Rinse the noodles under cold water, rubbing them gently to remove any stickiness. Drain in a colander. Enjoy with your favorite toppings or broth.
