This is a simple zenzai (sweet red bean soup) you can make quickly using canned sweetened red beans. It’s perfect for when you want a warm treat right away!

Recipe background:
I usually make homemade anko (sweet red bean paste) in a pressure cooker, but after using canned anko for Recipe ID: 18192130 and the New Year’s leftovers remake Recipe ID: 18677952, I had some left over and decided to try this.

Ingredients

Serves 1 to 2 servings
  1. 5.3 ozcanned sweetened red beans (about 150 grams)
  2. 1/2 cupwater (about 120 ml)
  3. 1/2 teaspoonsugar
  4. 2 pinchessalt
  5. 2-4 piecesmochi (rice cakes)

Steps

  1. 1

    Add the canned sweetened red beans to a pot.

    Pour in the water and add your desired amount of mochi. Simmer over low heat until the mochi becomes soft.

    Add the sugar and salt to finish. Don’t skip the salt—it really brings out the sweetness!

    Serve in bowls and enjoy.

    Some regions use toasted mochi, but I prefer the soft, simmered mochi in this soup.
