I came up with this yaki udon when I was busy with work and needed to make something quickly.

Slice the onion into thin wedges, cut the carrot into thin strips, and chop the cabbage into 1.5-inch (3–4 cm) squares. Cut the pork into bite-sized pieces (not too small).

Loosen the udon noodles by pouring hot water over them (cold water is also fine). If you don't have dashi soy sauce, mix the ingredients marked with ○ together.

Stir-fry the pork. When it's about halfway cooked, add the onion and carrot. (See Note 2)

Once the pork is cooked through and the onion has softened, add the udon noodles and cabbage.

When the pork fat has coated the noodles and cabbage, add the dashi soy sauce (or the mixed sauce). Stir until everything is evenly coated, then it's ready to serve!

Top with green onions or aonori (dried seaweed flakes) if you like.
