Penne alla Siciliana

My wife had this for dinner at our favorite restaurant and she loved it. I thought that I would surprise her by making it for her. She loved it so much, that I thought that I would share it.

Unfortunately, I did not have any Penne when I made it, so I used Farfalle instead. Surprisingly, it was very good and worked well. This is a great vegetarian dish, but you can add meat if you wish.

Enjoy!

Ingredients

4-6 servings
  1. Cooked Pasta of your choosing
  2. 1medium to large onion, diced
  3. 2-3 clovesgarlic, chopped or minced
  4. to taste Ground pepper
  5. 1 tspdried oregano
  6. 1 tspdried basil
  7. 1large eggplant, cut into squares
  8. 1 1/2-2 cupsgrape tomatoes
  9. 1 cupfresh mozzarella, cubed

Steps

    Prepare the pasta according to the instructions on the package. When done, set to the side.

    In a medium to large pot, put Olive Oil into it over a medium/medium high flame. Add the diced onion and garlic into the pot, along with the pepper, oregano, and basil. Cook the onion and garlic until the onion is translucent and the garlic is browned. For my preference, I remove the garlic here, but you can keep it in there.

    Add the eggplant to the pot and cook for 20-25 minutes. Stir the eggplant occasionally.

    Add the grape tomatoes to the pot next. Cook for another 15-20 minutes, until they start to become saucy.

    When the tomatoes start to get saucy, add the cooked pasta into the pot. Stir until everything is distributed fairly evenly. Cook for another 5 minutes.

    Remove from the pot and place into a pasta bowl. Place the fresh mozzarella on top of the pasta and toss together.

    Serve and Enjoy!

Since I was a kid, I remember sitting in the kitchen to watch and/or help my parents. As I grew up, I decided to try their recipes and experiment with different recipes. Some were very good and I re-make them all of the time. Others? Yeah, I never tried them again. All of the recipes that I post are the very good ones.Also, while growing up, my pops suffered from high blood pressure, so my mom stopped adding sodium. Since that is how I was raised, all of the dishes that I post do not have any extra sodium added to it. A lot of friends and family who try my recipes, either do not notice nor miss it. But in no way am I saying not to add salt if you use my recipes. If you want to add it, then go for it.In closing, I hope that you enjoy my recipes. If you use any, then please post pictures. Enjoy!
