Easy Stick Chicken Katsu

Cut chicken breast into sticks for easy eating! You can make a lot from just one piece, so it's great for potlucks, too.
Recipe background:
I just love anything called katsu, and I prefer lots of panko on mine! Since I like things easy, I wondered if I could make breading simpler—so I just shake everything in a container! I remembered making a big batch for my daughter's club potluck this way.

Ingredients

Makes about 1 chicken breast's worth
  • 1chicken breast (about 13.5 oz/380 g)
  • 2/3 cuppanko breadcrumbs (about 100 g, enough to fill a large container)
  • 2 1/2 tablespoonsall-purpose flour (about 20 g, for dusting)
  • Salt and pepper, to taste
  • Vegetable oil, for frying
  • Batter mixture:
  • 1/2egg
  • 1/3 cupall-purpose flour (about 40 g)
  • 1/4 cupwater (60 ml)

    Here are the ingredients.

    If the chicken breast is large, butterfly it or cut it in half to even out the thickness.

    Cut the chicken breast into sticks. Slice from the left side into strips about 3/4 inch (2 cm) wide and 2–2 1/2 inches (5–6 cm) long. If some pieces are long, cut them into 2 or 3 sections.

    Season the chicken with salt and pepper, then dust with flour. Prepare the batter mixture.

    Dip the chicken sticks in the batter, then coat with panko breadcrumbs.

    Put the panko in a large container. Lay about 5 battered chicken sticks inside, then sprinkle more panko over them.

    Close the lid and gently shake the container side to side and up and down a few times. This coats the chicken without getting your hands messy!

    Fry in oil at 340°F (170°C) for about 4 minutes. Done! This makes about 20 sticks.
