Recipe background:
At work, I only had an electric kettle and a microwave, but I wanted real ramen. It turns out you can make surprisingly good ramen this way. Once you know how, it’s easy.
Steps
- 1
These are the ingredients you can buy at a convenience store. Using a boiled egg cut in half is a nice touch.
- 2
Place the fresh noodles in a bowl.
- 3
Pour hot water over the noodles and rinse them well. Discard this water, but leave a little at the bottom of the bowl—this is important.
- 4
Add the bean sprouts on top. You can also put them in a separate container if you prefer. Since this is for work, keep it simple.
- 5
Microwave at 500W for 2 minutes. Add the bean sprouts and microwave for another 30 seconds. This cooks the noodles! If there’s too much water, the noodles won’t cook properly. That’s the key!
- 6
Loosen the noodles with hot water, then discard the water. Add fresh hot water, stir in the concentrated soup base, and add more hot water as needed.
- 7
Top with the boiled egg and any other toppings you like. You’ll be done in under 5 minutes. If you make the soup from scratch using my other recipe, it’s perfect.
