1/4large or 1/2 small pumpkin
Perfect ratio simmering broth
3/4 cupwater (200 ml)
2 tablespoonseach of soy sauce, sake, sugar, and mirin

The texture of the pumpkin is important. If cut too small, it can absorb too much flavor and become too strong, so cut it into large pieces.

Add the perfect ratio simmering broth to a pot and bring to a boil over high heat. Add the large pumpkin pieces, reduce to medium-high heat, and cover with aluminum foil as a drop lid.

Simmer until the broth reduces to about 1/3. If you're unsure about doneness, let it sit with residual heat for 3 more minutes to achieve a tender texture.
