1onion quartered
1carrot
1celery rib
1 sprigparsley
1bay leaf
1 sprigthyme

Add all ingredients to slow cooker with chicken carcass.

Fill slow cooker with water (leave 1/2" at top).

Cover and cook on LOW for 10 hours/overnight.
