The origin of this recipe
In Ibaraki, you can get great lotus roots at a low price. Since I came to the production area, I wanted to create a recipe. I made it into a salad where you can enjoy the crunchy texture✿

Ingredients

Serves 2 servings
  • About 2 inches (100g) lotus root
  • 1 can (120 g)mixed beans
  • As needed(if available) mizuna or lettuce
  • 2 tablespoons★mayonnaise
  • 1 teaspoonor more ★whole grain mustard or Japanese mustard
  • 1 teaspoon★vinegar
  • 1/2 teaspoon★sugar
  • 1 pinch★salt and pepper
  • 1little ★(optional) soy sauce

Steps

  1. 1

    I used a 120g can of mixed beans, but feel free to use your preferred amount.

    Roughly chop about half of the mixed beans.

    Slice the lotus root into thin half-moons or quarter-moons, about 2-3mm thick. Soak in vinegar water, then blanch in boiling water for about 1 minute, and cool in cold water.

    Cut the mizuna (or lettuce) into bite-sized pieces, soak in water to crisp, and drain well.

    Mix the ★ ingredients in a bowl, then add the drained lotus root and mixed beans, and mix well.

    Finally, toss with the mizuna, and it's ready to serve.
