Season the chicken thigh with salt and black pepper.

Rinse the bean sprouts and drain in a colander. Wash and chop the green bell peppers.

Mix the soy sauce, sake, mirin, and sugar together to make the sauce.

Heat a little vegetable oil in a skillet and cook the chicken thigh.

Once the chicken is cooked through, add the sauce all at once and cook until it thickens and coats the chicken.

Remove the chicken and cut it into bite-sized pieces.

Add the bean sprouts and green bell peppers to the remaining sauce in the skillet. Stir-fry quickly over high heat. Season with salt and black pepper to taste.

Arrange everything on a plate and serve!
