I wanted to make something like Yukimi Daifuku using mochi, so I gave it a try.
You can make different flavors of Yukimi Daifuku by changing the ice cream flavor!

Slightly melt the chocolate ice cream to make it easier to scoop and shape. Shape into two round portions, wrap in plastic wrap, and place in the freezer.

Combine sweet rice flour, water, and sugar in a microwave-safe bowl and mix well. Microwave for 2 minutes, stir, and microwave for another 2 minutes.

Dust a surface with potato starch, place the mochi mixture on it, spread it out, and divide it into two portions. Let it sit for a while to cool slightly.

Take the ice cream out of the freezer, quickly wrap it with the mochi, and return it to the freezer.
