Add all the broth ingredients to a pot and bring to a boil. Keep it simmering gently over low heat while you prepare the other ingredients. This recipe makes a generous amount of broth.

Meanwhile, cut the napa cabbage in half lengthwise, then slice into pieces about 3/4 inch (2 cm) wide. Cut the pork into bite-sized pieces.

Heat oil in a large wok or skillet, add the pork, and stir-fry until the color changes. Add the napa cabbage and stir-fry quickly over high heat to keep it crisp.

Cook the noodles to your preferred firmness.

Add the stir-fried cabbage and pork to the broth and bring to a boil.

Place the drained noodles in bowls, pour the hot broth with pork and cabbage over them, and serve. I enjoyed this with yuyu×yuyu's Kamukura-style garlic chives.
