Cut the scallions however you like. I like to mix finely shredded and thinly sliced on the diagonal. Cut the mizuna into pieces about 2 inches (5 cm) long.

Bring all ★ ingredients to a boil in a pot.

Add all the mizuna and scallions to the pot. Once it comes back to a boil, it's ready. Bring the pot to the table with the pork.

Swish the pork slices in the hot broth, then wrap them around plenty of scallions and mizuna.

Dip in ponzu sauce, adding chili oil if you like. After finishing, you can add udon noodles or similar to the broth.
