Ingredients

Makes 15–16 pieces
  1. 7 oz (200 g)ground pork
  2. scant 1/2 teaspoon salt
  3. 5.3 oz (150 g)onion
  4. 1 stalk(2.8 oz/80g) white part of green onion
  5. 0.35 oz (10 g)fresh ginger
  6. 1 tablespoonsoy sauce
  7. 1 tablespoonsake (Japanese rice wine)
  8. 1 teaspoonsugar
  9. 1 1/2 tablespoonspotato starch
  10. generous pinch white pepper
  11. 1 tablespoontoasted sesame oil
  12. 15–16 shumai wrappers
  13. as neededNapa cabbage,

Cooking Instructions

    Finely chop the onion, white part of the green onion, and ginger.

    In a bowl, combine the ground pork and salt. Mix until the mixture becomes sticky.

    Add the chopped onion, ginger, green onion, and all ingredients marked with ◎ (soy sauce, sake, sugar, potato starch, white pepper, sesame oil). Mix well.

    Wrap the meat filling in the shumai wrappers. (The number of shumai will vary depending on how much filling you use for each.)

    Line a bamboo steamer with napa cabbage leaves and arrange the shumai on top.
