Ingredients

4 servings
  1. 1large sweet potato
  2. 1 tspoil
  3. to tastesalt & pepper
  4. 120 mlfavourite BBQ sauce or see my previously posted recipe*
  5. lightly toasted bread rolls to serve, see my quick bread recipe

Steps

  1. 1

    Peel the sweet potato and shred using a cheese grater

    Heat the oil in a frying pan and throw in the grated sweet potato evenly

    Sprinkle with some salt and fry on a medium-high heat for 5 minutes until drying and turning a lighter colour. Keep it moving in the pan so it doesn't burn

    Add the BBQ sauce to the pan and turn the heat down to medium-low

    Cook for 12 - 15 minutes stirring now and again
