Ingredients

Serves 1 serving
  • 1 blocktofu
  • Salt and pepper, to taste
  • 2 tablespoonsall-purpose flour (about 16 grams)
  • 1large egg
  • as neededPanko breadcrumbs,
  • 2 tablespoonstonkatsu sauce (about 30 ml)
  • 1 tablespoonconcentrated noodle soup base (mentsuyu, 3x strength) (about 15 ml)
  • as neededWhole grain mustard,
  • as neededSunflower oil,

Steps

  1. 1

    Drain the tofu. Fold a clean towel, place a layer of paper towels on top, and set the tofu on it.

    Place another layer of paper towels on top of the tofu, then set a plate or other weight on top to press out excess water.

  3. 3

    Let the tofu press until it is less than half its original thickness. Adjust the weight as needed.

    Sprinkle the tofu with salt and pepper. If more moisture appears, blot it with paper towels.

    Coat the tofu evenly with flour.

    Coat the tofu evenly with the beaten egg.

    Coat the tofu with panko breadcrumbs.

    Pour oil into a pot and heat to 350°F (180°C).

    Fry the breaded tofu in the hot oil for 3 minutes.

    Drain excess oil from the tofu using paper towels.

    Place the tofu on a plate, top with the sauce mixture and mustard, and serve.
