Bring butter to room temperature.
Beat the egg.
Line the baking pan with parchment paper. - 2
In a bowl, cream the butter. Add sugar and mix until it becomes pale. - 3
Gradually add the beaten egg and mix. Sift in the flour and fold with a spatula.

Wrap in plastic wrap or a bag, roll out to fit a baking tray (about 8x9 inches), and freeze to set. *1

Remove the wrap, place in the pan, prick with a fork, and bake in a 350°F oven until golden (about 12-15 minutes). Cool in the pan.

1 You can also roll it directly in the pan to save time. Freeze for 5 minutes while preheating the oven.

Spread the almonds on parchment paper and bake in a 350°F oven (about 5 minutes). - 8
In a pot, combine all ingredients except almonds, bring to a boil, then simmer on low to avoid burning (about 5 minutes).

When slightly browned, add almonds, mix, and immediately pour over the cookie base, spreading evenly.

Bake in a 350°F oven for about 15-20 minutes until nicely browned.

Once slightly cooled, remove from the pan, let cool, and cut while still warm.
